There's no way to adjust picture profiles and white balance on the fly (so for example if you want to adjust the white balance you have to exit video mode into photo mode, select the preset you want, go back into video mode and see how it looks.

There's no manual exposure control in video mode without a custom firmware. The Nikon D5100 is really terrible for video. Ever since I bought it, though, I've kind of regretted it. I'm a small-time videographer/filmmaker and I've been using a Nikon D5100 for the past few years for my various projects.
